I've ended up with an AI lab in a public community college. What should we actually be teaching?

An AI lab has been established at a public further education college in Ireland, similar to a US community college, with the aim of equipping students with practical AI skills beyond basic tools like ChatGPT. The lab has decent hardware and is seeking ideas on what curriculum would be most beneficial to teach students.

This post offers a direct, crowdsourced inquiry into practical AI curriculum development, unlike typical reports that detail established programs or theoretical frameworks.
